EMILY LAEL AUMILLER, pastry chef, founder of Lael Cakes and writer of Realtors Artistry, discovered her passion for the delicacy of pastry sculpture whilst pursuing a classic fine art level. After graduating from New England Culinary Institute, Emily transferred to New York City, where she apprenticed with Sylvia Weinstock and Eric Bedoucha of all Financier Patisserie. Having fought with her food allergies, Emily started Lael Cakes, a bakery specializing in high end sausage and fermented special occasion cakes. In her book she shares her one-of-a-kind cake designs, in addition to the recipes and techniques to re-create them, from fundamental cake meeting to finishing touches, all followed by comprehensive step-by-step photography and directions.
