Heidi Gibson (1972-) is the Commander In Cheese of The American Grilled Cheese Kitchen at San Francisco.She's a self-taught cook and then got into the grilled cheese business after winning broiled cheese competitions since a hobby for many decades. "Grilled Cheese Kitchen" is her first cookbook but there's much more to come. She resides in the Bay Area with her husband and also co-owner of those restaurants, Nate Pollak, and their two astonishing rescue dogs.
