After switching to a whole foods diet without gluten and other allergies inspired by her own health developments, Katlin Smith started on her mission to generate food that's delicious, healthy, and easy.   Katlin started making the very first Simple Mills muffin mixes one-by-one in her very own living room at North Carolina using flaxseed components like almond milk and coconut sugar which made her feel great.

Now based in Chicago and with an expanded line of baking mixes, breads, biscuits and frostings, Simple Mills continues the custom of baking together with love. The brick walls, big windows and kitchen of our little office are still where our baking innovations come from.     Sometimes get excited about achievements large and small, we cease to laugh at the stuff, or break out the kombucha and also have a dance party.

Wellness specialist and gluten-free guru Elana Amsterdam is the founder of elanaspantry.com, a website where she shares simple, wholesome recipes and lifestyle advice with her readers. She has appeared on CNN and MSNBC and has been featured in Various media outlets including The Wall Street Journal, The Washington Post and Fortune Magazine, and has written articles for The Denver Post, Form Magazine, Parents, and also Delicious Living.

Her first publication, The Gluten-Free Almond Flour Cookbook, published by Random House in 2009, has been named one of those "Best Cookbooks of 2009" from The Denver Post. Gluten Free Cupcakes (Random House 2011), is filled with spectacularly delightful, yet healthful and nutrient dense desserts.

Her forthcoming publication, Paleo Cooking from Elana's Pantry, a gluten free, grain-free, dairy-free, nightshade-free group of easy and quick recipes which range from dinners to desserts, will probably be released in June 2013. Elana lives with a variety of taste testers which range to her two teenage sons from her husband of 18 years in the heart of Boulder, Colorado.
